This is the definition of minimalist Thai cooking. The steam not only gently cooks the fish until just tender but also creates an instant, complex sauce from a handful of basic ingredients. Scoring the fish's flesh allows more of the flavor to season the fish and facilitates faster steaming. The fish is cooked on a plate that fits inside the steamer, to catch the juices.

CHILI GARLIC NOODLES

INGREDIENTS

2pcs Instant Noodles
-
500g Ground Pork
-
20g Minced Garlic
-
10g Grated Ginger
-
40g Chopped Green Onion
-
45g Gochugaru
-
30g Sesame Seeds
-
15g Sugar
-
30ml Dek Som Boon Thin Soy Sauce

15ml Black Vinegar
-
20ml Canola Oil
-
Salt (to taste)
STEPS TO MAKE IT

In a medium saucepan, boil noodles until al dente. Strain and set aside a small amount of pasta water.

In a small mixing bowl, combine Dek Som Boon thin soy sauce, black vinegar, sugar, gochugaru, sesame seeds. Mix and set aside.

In a non-stick pan, saute garlic, ginger, and green onions until fragrant. Do not remove.

In the same pan, add ground pork and salt. Saute until pork turns brown.

Add the mixed sauce, cooked noodles, and pasta water. Mix until fully incorporated. Adjust seasoning if necessary.

Serve.
